Description

A small part of the grapes are scraped, between 10 and 20% depending on the vintage. They are vinified in cement vats open for 15 to 20 days, with indigenous yeasts only. The aging lasts from 18 to 20 months in old barrels. Before bottling, the wine is neither glued nor filtered.

Tasting Notes

This Grand Cru has a beautiful ruby color. The nose reveals hints of kirsch and undergrowth from a young age. With age, the aromas evolve towards more wild game notes. The palate is powerful, rich and spicy, with fine tannins. The finish is of remarkable length, supported by very beautiful bitters.

Food Pairing

It goes well with the tasty meats associated with mushrooms, feathered and feathered game, leg of lamb, veal kidneys, as well as with character cheeses.
